Seafood Tagliatelle

You will need:

1 x onion, finely chopped (click for tutorial)

1 x garlic clove, crushed

1 x courgette, finely chopped

800g Passata or chopped tomatoes

400g frozen fish pie mix

1 x vegetable stock cube

1 x glug of olive oil

2 x tablespoon of capers

400g tagliatelle

Handful of chopped parsley



Serves 4


Heat a large pan, add the oil and fry the onion for 5 minutes on a medium heat, stirring frequently. Add the courgette and garlic and fry for a further 5-6 minutes until soft. Crumble in the stock cube and watch it gradually melt as you keep stirring. Add the passata or chopped tomatoes along with the capers. Simmer on a low-medium heat for 10 minutes. Boil some water ready for the tagliatelle. Add the frozen fish mix to the sauce, ensure it's mixed well, put a lid on and cook for 10 minutes. Put the tagliatelle into the boiling water. Remove the lid from the sauce and cook for a further 10 minutes until the fish is cooked through. Add salt & pepper to taste. Mix the cooked tagliatelle and sauce together & serve. Sprinkle the parsley over the top. Yum.
